This Colombian start-up has found a rare and sustainable way to color things blue

Ecoflora’s natural blue comes from a special fruit tree native to Latin American forests, the Jagua tree, also known as huito. The Jagua fruit looks like a cross between a kiwi and a melon. When its juice is exposed to the air, it changes from clear in colour to a deep blue semi-permanent dye. Indigenous people have used Jagua juice for centuries to draw ceremonial body tattoos that can last for weeks. Now, Ecoflora has developed a way to remove the staining properties of the dye to plug a longstanding hole in the food and beverage industry.
